Yummy Punjabi Chicken With Spinach

I absolutely love this Punjabi chicken and spinach dish, it’s just so yummy and very healthy. By using a few tablespoons of yoghurt , some aromatic spices and baby spinach, you can truly make a healthy meal for the whole family.

Below you will find a You Tube video, a list of ingredients and the directions on how to make this yummy Punjabi chicken with spinach dish.

 Ingredients

  • 2 black cardamon pods
  • 2 bay leaves
  • 1 cinnamon pod
  • 1 diced onion
  • 3 fresh tomatoes
  • 4 green chilies
  • Peeled garlic pods
  • Chicken pieces of your choice
  • 2 teaspoons of coriander
  • 1 1/2 teaspoons of garam masala
  • Salt to taste
  • 450 g of washed spinach
  • 3-4 tablespoons of yoghurt

Directions

  1. Add cooking oil to fry pan and heat until a medium temperature.
  2. Add the cardamon, bay leaves, cinnamon pod and diced onion, stir altogether until onions are brown.
  3. Prick chilies with knife so they don’t explode and add them to the pan.
  4. Puree tomatoes and garlic pods in a blender together.
  5. Add the chicken pieces into the fry pan.
  6. Then pour the pureed tomato and garlic to the chicken pieces.
  7. Then add the powdered spices, coriander, garam masala, season with salt.
  8. Place the baby spinach in a food processor and puree.
  9. Add the yoghurt to the chicken, stir into the mixture and blend well.
  10. Then add the pureed spinach to the chicken and stir well.
  11. Place the lid on the pan and allow to cook on a reduced heat for 10-12 minutes.
  12. Allow to slightly cool before serving.
