It may be more efficient to cook your skewers in a tandoor but the horizontal-cooking school argues that as the meat cooks the juices run down the skewer resulting in the pieces of meat nearer the top ending up drier.
Amble along Sydney Road and you will see who lines up with which camp. There are a fair number of Greek, Turkish and Indian places favouring the vertical, but it seems as though Afghani kebabers have cast their vote for the other side.
At Salateen’s Kebab the flat skewers of lamb chunks, minced lamb and orange-coloured chicken tikka recline on a little pile of coals. They’re served on a patterned plastic plate with a mound of salad, sheets of puffy perforated Afghani bread and dipping sauces of yoghurt and a sort of garlicky vinegar known as chatney. The meat is dead juicy and mildly spiced. The lamb is quite salty but once wrapped in a piece of bread and with the tangy sauces as a foil it’s perfectly in balance. Salateen’s also offers Afghan curries (lamb and chicken karahi) and rice dishes in this clean pine-panelled cafe with shiny see-through plastic on the tables protecting fabric runners.
